Assalamu alaikum, I guess this might be asked a lot, but I need to get it off my chest. I'm Christian, and I've always tried to respect everyone, but now I'm scared about shirk. I've been following a different faith my whole life, and the thought of eternal punishment really frightens me. Does Islam really say that if I learn the truth and still reject it, I'll end up in Jahannam? Sorry for the question, I've just been really anxious.

There is no compulsion in religion, but the message is clear. Learning the truth and rejecting it out of arrogance is different from not knowing. May Allah make it easy for you.
Don't worry, man. Lots of reverts felt the same before accepting Islam. Just keep searching and don't let anxiety block the truth.
